Behind-the-Edge Thickness: The Number That Actually Matters
When people talk about a knife's sharpness, they usually focus on the edge angle. But there's a quieter spec that has a bigger impact on how a blade actually feels and performs: behind-the-edge (BTE) thickness.
What It Is
BTE thickness is the width of the blade measured a short distance back from the apex of the edge, typically somewhere between 0.010" and 0.030" up from the very tip. It tells you how much steel the edge has to push through material before the wider body of the blade takes over.
Think of it like the wedge shape of an axe head just above the bit. A thin, tapered wedge glides through wood. A thick, blunt one has to shove material aside to make room for itself.
Why It Matters More Than the Edge Angle Alone
Two knives can have the exact same edge angle, say 20 degrees per side, and still feel completely different in use if their BTE thickness differs. A blade that's ground thin behind the edge will:
- Slice through food, cardboard, or rope with noticeably less resistance
- Feel "sharper" even at an identical angle
- Require less force, which means cleaner cuts and less wrist fatigue
A blade that stays thick behind the edge, even with a fine edge angle, will feel like it's wedging its way through the material instead of slicing it. You'll notice this most in dense cuts like carrots, apples, or thick cardboard, where the knife seems to stop cutting partway through and starts pushing material apart instead.
The Trade-Off
Thinner isn't free. Less steel behind the edge means:
- More flex and less edge stability
- Higher chance of rolling or chipping on harder use, like batoning or cutting through bone
- A blade that needs more careful maintenance
This is why the right BTE thickness depends on the job. A dedicated kitchen slicer or fillet knife can be ground thin behind the edge because it's only ever asked to glide through soft material. A hard-use outdoor or camp knife needs more steel behind the edge to survive prying, chopping, and abuse, even if that means it won't feel quite as effortless on a tomato. A good knife maker matches BTE thickness to the knife's intended purpose rather than grinding every blade the same way.
